BLT Stuffed Avocados

This is a quick and easy dish to make and if you love BLT’s then this will be just right for you!

  • 2 large avocados
  • 1 teaspoon lemon juice
  • 1 ½ cups small cubed rustic bread
  • 1 medium tomato, cored, diced
  • 1/3 cup spinach leaves, thinly sliced
  • ¼ cup cooked bacon, chopped
  • 2 tablespoons mayonnaise
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  1. Preheat oven to 400 degrees F. Halve the avocados and pit. Brush inside and out with the lemon juice. Place on a parchment lined baking sheet. Set aside.
  2. In a medium bowl add the bread, tomato, spinach, bacon, mayonnaise, salt and pepper. Toss lightly to combine. Fill each avocado half with ¼ of the bread mixture, packing lightly.
  3. Bake for 10-13 minutes, or until the bread stuffing begins to brown. Remove and serve immediately.

Need a garage??

We currently have a few garages available. Our garages are $100 per month and they will not be available for long! We wanted to give our current residents the option of renting one before they are all gone. Please contact the leasing office if you are interested.

Recycled Greenhouses

This year the South Carolina Green Schools Caucus has teamed up with the South Carolina Chapter of the USGBC and the Palmetto Green Schools Initiative to host events at K-12 schools all over the state.

These events aim to improve school environments through service-projects, education, and community activities. One project in particular, is the building of greenhouses out of recycled 2-Liter bottles.

In addition to being good for the students, the project is also good for the environment. Each greenhouse project requires about 1,400 recycled 2-Liters, saving them from going in to landfills or waterways.

The more recycled greenhouses that are built, the less plastic waste there will be. Overall, the project serves to help the environment, school or otherwise.

Find out more information about their Initiative at www.palmettogreenschools.com. Like them on Facebook and follow them on twitter (@PalmettoGreenSc).

Drop off your empty 2-Liter bottles at the office by September 25th to help support this local project!
